Salads and Sandwiches
Working luncheons are preset on tables with beverages and choice of dessert (see below).
Evansville Club - $8.10 per guest
Triple-decker sandwich with turkey slices, baked ham, crisp bacon, lettuce, and tomato. Served with chips and a pickle spear.
Eagles Croissant - $8.05 per guest
Choice of ham and cheddar or turkey and Swiss, garnished with lettuce and tomato on a flaky croissant and served with cole slaw.
University Chicken Sandwich - $10.15 per guest
Marinated chicken breast on fresh baked roll served with Swiss cheese, lettuce, tomato, and pasta salad.
Chicken Caesar Wrap - $9.10 per guest
Tortilla shell stuffed with marinated chicken strips, romaine lettuce, tomato, and parmesan cheese tossed with Caesar dressing. Served with chips and a pickle spear.
Train Car Submarine - $10.15 per guest
Two half sandwiches of roast beef with Swiss and turkey with cheddar served on USI's Own bakery breads. Lettuce and tomato garnish. Served with pasta salad and pickle spear.
California Cobb Salad - $9.50 per guest
Fresh mixed greens with avocado, bacon, egg, turkey, tomato, and blue cheese. Topped with home-made croutons and served with blue cheese dressing and dinner rolls.
Black and Blue Salad - $13.10 per guest
A bed of crisp romaine topped with parmesan cheese, croutons, tomatoes, beef,
blue cheese, and crumbled bacon. Served with Caesar dressing and a dinner
roll.
Chicken Caesar Salad - $8.70 per guest
Fresh romaine lettuce with croutons and Caesar dressing, topped with sliced marinated chicken breast, parmesan cheese, tomatoes, and mushrooms. Served with garlic-parmesan breadsticks.
Steak may be substituted for an additional $4.25 per guest
Fresh salmon may be substituted for $3.75 per guest
Garden-Fresh Chef Salad - $8.65 per guest
Romaine and iceberg lettuce topped with ham, turkey, Swiss and cheddar cheeses, tomato, eggs, and choice of two dressing.
Buffalo Chicken Salad - $12.35 per guest
Popcorn chicken tossed in spicy buffalo sauce atop a bed of romaine and iceberg. Served with fresh celery, carrot, tomato, blue cheese or ranch dressings, and a cheddar herb biscuit.

USI's Specialty Chicken Pot Pie - $14.20 per guest
Grilled chicken and fresh vegetables smothered in homemade chicken gravy, topped with flaky pastry. Served in individual casserettes.
Chicken Dijon - $15.35 per guest
Marinated chicken breast sauted in white wine and topped with creamy dijon sauce. Served over wild rice.
Mango Chicken - $15.35 per guest
Chicken breast sauted in mango and orange liquor garnished with mango and toasted almonds. Served with fried rice and corn muffins.
Stuffed Chicken - $15.35 per guest
Baked chicken filled with basil cream cheese, topped with a mushroom wine sauce. Served on a bed of savory rice.
